1. Char Kuey Tiaw (Fried Rice Noodles).
Classic must try in Penang. Bouncy rice noodles, eggs, bean sprout, and prawns, stirred fried within a burning hot wok. Oily, fiery, and packed full of punchy deliciousness!
I let my appetite be the punching bag of a plate of champion de la champ Char Kuey Tiaw prepared by an old uncle on the corner of Siam road, Georgetown.
Eggs skillfully toss into the hot oily wok, followed by rice noodles portion picked into the wok. With his almost wife-like stature spatula- given that it was worn out till the point that his hand touches the wok when he fry- he added chillies, prawns, bean sprout and other ingredients into the wok.
The left hand holding his fan, the other holding the spatula, with his hero-like swag, he stir and stir... and still stir till all the fragrance within the wok spurred out at once when it was serve on the plate. And those fragrance never failed to make my stomach growl every time... in the 45 mins I waited for my plate.
All wait was worth it once that boxing champ was on a plate served in front of you. A plate of Char Kuey Tiaw with sumptuous amount of prawns, Lap Cheong and bean sprout. Every mouth was full packed of flavour and taste of its ingredients! All thanks to that magnificent charcoal frying and the hard work of an old uncle, under a small stall, on the corner of Siam Road.

2. Prawn paste fried roll
One of my favourite dim sum dish in Penang! Perfect mixture of minced pork and prawn meat wrap in a thin crispy crust. One bite into it equals to 2 seconds of floating-up-in-the-sky time! hahahahah. That was how
